My city, Changsha, has its own trio of flavors that tell a similar story of food and life. First is the iconic stinky tofu: fried to a crispy golden crust, soaked in spicy and savory sauce, it’s a street food that divides opinions but unites locals—you can find vendors selling it on almost every corner, from busy pedestrian streets to quiet residential lanes. Second is the rich and spicy numbing crayfish: summer nights in Changsha are incomplete without sitting at a roadside stall, peeling crayfish with bare hands, and pairing them with cold beer, a scene as lively as Chongqing’s hot pot gatherings. Third is the "flavor of life" rooted in the city’s slow and cozy moments: the morning bustle of people lining up for rice noodles with minced pork and pickles, the afternoon calm of sipping osmanthus tea in Yuelu Mountain’s teahouses, and the evening buzz of barbecues in old hutongs where friends laugh and share stories until late.
